[LOW CARB RECIPE] Kale Salad With Avocado Dressing

This week we bring you a kale salad with an avocado dressing. It's a quick recipe that allows you to add your favourite toppings so you can make it a complete meal.

The key is the avocado dressing. It's very easy to make and makes everything tasty, so save the recipe now that the cold months are behind us.

Choose the seasonal leaves you like best (spinach, endive, watercress, kale...), pair them with the vegetables you like best (baby garlic, radish, avocado...) and the protein of your choice and voila... a salad to enjoy and nourish you.

Creamy avocado dressing:

This dressing can be used as a substitute for mayonnaise in a multitude of dishes such as fish, chicken or grilled vegetables.

It holds 2-3 days in the fridge without the avocado starting to lose colour.


  • 1 Ripe avocado
  • 3 Tablespoons extra virgin olive oil
  • 3 Tablespoons Greek yoghurt
  • Juice of 1 lemon
  • 1 Clove of garlic
  • Water
  • Salt
  • Black pepper


1.- Reserve a little lemon juice to dress the kale.

2.- Place all the ingredients in a blender or small food processor and blend until smooth. Dilute a little with water if necessary and season to taste with salt and pepper.

3.- Set aside in the fridge.

Kale Salad:

In this case we have used kale as the base for our salad. This leafy green, as it has harder leaves than other types of lettuce or sprouts, needs a previous step. If you choose another type of lettuce, this step is not necessary.

To soften the texture of the kale a little, we are going to dress it with lemon juice, salt and olive oil and then leave it to rest for about 15-20 minutes. This will make the leaves more tender and more pleasant to chew.

We also recommend removing the thickest stems.



1.- In a bowl, make a vinaigrette with the olive oil, salt and lemon juice that you have previously set aside.

2.- Add the kale leaves to the bowl and mix well with the vinaigrette.

3.- Leave to rest for 15-20 minutes.

4.- Prepare the toppings.

5.- Dress the salad with the avocado dressing.
